What to do with Leek Scapes

If you have never tried leek scapes, you are really missing out! They are much larger than garlic scapes, and remain straight, versus the curly garlic scapes, but they are just as delicious, or maybe even more. Cooked, they have similar texture and consistency as asparagus, with just a mild oniony flavor. My favorite way to cook these is to simply grill them. Just put as many as you can squeeze into a flip grilling basket in a single file row, spray with your favorite oil--I prefer olive oil, and grill for 3 to 4 minutes per side. I like to squeeze some fresh lemon over them, and then sprinkle with coarse salt. They are addictive so enjoy!
